Enjoying a cup of chai latte goes perfectly well with a slice of cake or something sweet. Plus chai is hands down my favourite tea to bake with. Chai adds the most beautiful bold aromatic flavours to sweet treats and cakes.

Is Chai Tea Made With Milk or Water?

Chai tea can be made with milk or water, it is all down to personal preference. I like to infuse loose leaf tea directly in sweetened milk to create extra indulgent creaminess. Its best to add slightly more tea than you would when infusing in water to ensure that the flavours come through. I’m using 3 heaped teaspoons of chai to 2 cups of coconut milk plus coconut cream and maple syrup.

How to Make my Chai Tea Latte with Coconut From Scratch

Making a chai latte from scratch is so simple to do with just a few ingredients. I’m using loose leaf masala chai to make mine, however, feel free to use masala chai tea bags. Swap 1-2 heaped teaspoons to 1 tea bag.

Heat the coconut milk, add the coconut cream, maple syrup and stir until everything is well combined. Turn off the heat and add the tea to infuse. Pop the lid on to lock in all those tea oils. Once ready, pour through a fine mesh strainer to remove the leaves. Using a frother, add some lovely latte like bubbles and enjoy. Alternatively, use a milk steamer.

TIP: If you prefer a stronger brew, add more tea and not more time. Adding more tea will give a more intense flavour without any bitterness that extra time may give.

INGREDIENTS (Serves 2)

  • 3-4 heaped teaspoons of masala chai (or 3 tea bags)

  • 2 cups of coconut milk - from a carton

  • 4 tablespoons of coconut cream - from a can

  • 2-3 tablespoons of maple syrup

  • Coconut whipped cream/whipped cream to Serve - optional

  • Dusting of cacao powder & cinnamon - optional

METHOD

  • Firstly, pour the coconut milk into a small saucepan and heat through.

  • Turn off the heat, add the masala chai and pop the lid on to lock in all of those masala chai aromas.

  • Allow to infuse for 5-10 minutes before removing the leaves using a fine mesh tea strainer.

  • Place the saucepan back on the heat and add the maple syrup and coconut cream.

  • Keep stirring until all of the ingredients are well combined.

  • Next, add some latte-like-bubbles using a milk frother, but be careful not to splash yourself with the hot tea!

  • Pour into cups or mugs and add a spoonful of vegan whipped cream and dusting of cacao powder and cinnamon if you desire extra naughtiness.
