Ingredients
- 150 g Red Onions Sliced
- 150 g Leek Chopped
- 100 g Carrot Sliced
- 100 g Swede or Turnip (Chopped)
- 200 g Baby Potatoes Washed and Thrown In Whole
- 50 g Butter
- 1 Chicken Stock Pot
- 800 ml Boiling Water or Stock
Instructions
Saute your onions and leek for a couple of minutes, until they're soft, but still light in colour.
Add all your ingredients to the pot, stir well and select your chosen setting.
We like smooth soups most, so we chose the smooth option on our Morphy Richards. If you are going for chunky soup, you might prefer to chop your vegetables smaller and peel your baby potatoes.
Serve hot with fresh bread.

Greetings everyone, yep soupmakers rock!! I like to add some lovely herbs to make my version a little bit dynamic . Garlic, bit of mixed herbs & if feeling in need of that little warmth some chilly flakes and pop in handful of spinach. Delicious. Got my bread warming in oven as we speak and looking for a happy retro-classic film to watch while I took in on my day off. Happy days folks.

Hi. I love your leek & potato soup it has quickly become a family favourite. I am wanting to try more soup recipes.
On this recipe the ingredients state using a chicken stock pot. I’m not 100% sure what a stock pot is, so could I use a stock cube instead or does it need to be a stockpot?Another quick question….
Can I use a soup & broth mix in the soup maker? If so do the timings need to be changed at all. The package states it’s to be cooked for 50 minutes. Any advice is greatly appreciated..Thank you.

Sorry Sandy. A stock pot, is just like a stock cube, but is in a jellied form. Stock cubes are fine. I do use soup and broth mix in my soupmaker, but I have a non stick version. I haven’t changed timings and it worked out for me. The only way to know is to try it. Some barleys are faster cooking than others though, so if it says 50 to cook, is that for the broth mix?

Yes that is for the broth mix instructions. Although recently I have been using a soup pan as I’ve been cooking a gammon with the soup. It’s great.

Sandy, if course you can use a stock cube, the only difference I can see between a stock pot and stick is that one is a sort jelly and the other as you know is a dried cube. I always use a stock cube with no failures yet!

Good question. It’s winter vegetable, not vegetarian/vegan soup. I like it with chicken stock, but it isn’t chicken soup, as it’s just a stock cube or stock pots for this version. Vegetarians, vegans or anyone who likes to eliminate all meat products, would replace the stock with vegetarian/vegan friendly versions.
