The best Keto Coleslaw recipe with an extra added boost of healthy with chopped kale and extra red cabbage to complete this perfect summer salad. This low carb coleslaw will be impossible for your family to resist.
This Keto Coleslaw recipe is rightttttt up there with my favorite Keto Broccoli Salad recipe. I think I’ve realized something after just typing that… I love mayonnaise based salads. Not ashamed and hope you don’t mind us going down this road of unbelievably amazing summer salads. Lets go. 😉
So just like our broccoli salad this has some little extra health spin to it. KALE! I’m actually a bit of a kale fan in certain context. It has to be hiding in something, especially when there is mayonnaise involved, it’s the perfect companion for kale. Has anyone else ever been able to enjoy just a plain kale salad?
So while this broccoli slaw recipe is perfect as well this keto coleslaw recipe has an extra healthy kick with some kale and extra cabbage because I LOVEEEEEEE cabbage. If you Egg Roll in Bowl recipe doesn’t prove that point I don’t know what would.
Why is cabbage so delicious? Well perhaps that is why coleslaw is a HUGE favorite of ours. Cabbage WITH MAYONNAISE.. it’s just the perfect combination for our tastebuds and souls as we kick off this summer.
So first we’ve got to mention the tip I was taught by another to make that perfect sweet and crunchy slaw. This picture here above shows us step 1 of making the perfect keto coleslaw.
Tips for that perfect flavorful sweet crunch Keto coleslaw
One of the ways I’ve found to make delicious coleslaw is by first soaking the coleslaw vegetables into one large bowl with some salt and sweetener of your choice.
Let them mingle together for a bit. The sweet and salt mingles into the coleslaw and really does a huge difference vs. just throwing a coleslaw dressing in.
You want to then rinse the coleslaw mix under cold water well.ÂLike realllllllly well, otherwise you’ll end up with very sweet and very salty coleslaw mix and I can say from experience… you do not want that.
You then want to get rid of any extra water in the coleslaw. A salad spinner is the easiest and simplest way to do that. If you do not have a salad spinner removing the water with paper towel by pressing the coleslaw mix until no water strains out works as well, just a bit more work.
TIP: Make sure there is NOT a ton of excess water in the coleslaw as your dressing with sit in a pool on the bottom of the slaw instead of being wrapped around each delicious bite.
HOW MANY NET CARBS FOR OUR Keto Coleslaw
3.2 Net Carbs per serving.ÂÂThere are 48 grams of sugar alcohols in this entire recipe, making about 10 servings there will be 4.8g of sugar alcohol per serving of slaw. The Net Carbs is by subtracting the sugar alcohol from the carbs which is provided at the top of the nutrition card below.

Ingredients
- 4 1/2 cups coleslaw mix
- 2 cups curly kale , finely chopped
- 1/2 cup chopped red cabbage
- 1 Tablespoon salt
- 2 Tablespoons xylitol
Slaw Dressing
- 2/3 cup mayonnaise
- 2 Tablespoons xylitol
- 2 Tablespoons apple cider vinegar
- 1/2 Tablespoon dried parlsey
- 1 large pinch black pepper
Instructions
Combined coleslaw mix, kale and red cabbage into large bowl. Sprinkle with sweetener and salt, toss together to combine. Let mix rest for 5 minutes then thoroughly rinse under cold water. Transfer coleslaw to salad spinner or paper towels to remove all excess water.
In a small bowl whisk together mayonnaise, sweetener, vinegar, parsley and pepper. Pour dressing over coleslaw and toss until fully coated. Add additional pepper, sweetener or splash of vinegar to taste, if desired.
Notes
Please note that there are 48 grams of sugar alcohol in the entire recipe and should be subtracted to get your net carbs. If you split the recipe into 10 servings like per the recipe then that would be 4.8g of sugar alcohol per serving.

xylitol is a sugar-free sweetener type. We go into low carb sweeteners in this post here if you are new to this diet.
